Camembert Nibblies with Rocket and Pistachio Dollop

You will need

  • Crackers

  • Slices of camembert (room temperature)

  • Pinegrove Gourmet Rocket and Pistachio Pesto

  • Fresh Rocket leaves

  • Pistachio Nuts


Simply place a piece of camembert cheese on your cracker. Add a generous dollop of Rocket and Pistachio Pesto and garnish with a leaf of rocket. Place your pistachio nuts into a small bowl and serve with your platter of crackers and cheese. Using the ingredients that are in the pesto  accentuates the flavours and balances the dish. 

Any Pasta with Rocket and Pistachio Pesto

I say any pasta, because it really doesnt matter ! Fresh, home-made, store-bought, bows, shells, spaghetti, parpadelle..........this is a simple yet tasty dish, served with or without an accompanying protein. 

You will need

  • 400g pasta of your choice

  • 2-3 tablespoons Pinegrove Gourmet Rocket and Pistachio Pesto depending on your own taste buds.

  • Salt for the pasta water

  • Protein of your choice, or not. Seafood scallops or chicken would be a good choice. These need to be cooked separately to the pasta.

  • Shaved or grated fresh parmesan cheese.


Prepare the pasta in the usual way and drain. Stir through the pesto. Add the protein. Plate up and sprinkle with parmesan cheese and some fresh rocket if you have any.  Add a small salad of greens and cherry tomatoes dressed with olive oil to complete the dish. 

Toasted Roast Beef or Lamb Wraps with Rocket Pesto

You will need

  • Several flour tortillas

  • Leftover roast beef  or lamb cut thinly

  • Rocket and Pistachio Pesto

  • Shredded lettuce

  • Thinly sliced tomatos

  • Grated tasty cheese

Lay the tortilla flat and spread generously with Rocket and Pisatchio Pesto. Assemble all the other ingredients on top. Roll the tortilla and place in the sanwich press until slightly browned on top. You could also add a zesty tomato relish  to dip the tortilla into for added flavour.
